• 3 pieces of Oscietra sturgeon (or 1 whole filet)
  • Beer
  • 1 white onion
  • 2 white potatoes
  • 2 carrots
  • 1/2 Red bell pepper
  • 1/2 Yellow bell pepper
  • 3 Garlic cloves
  • 2 Bay leaves
  • 3 Rosemary sprigs
  • Cumin
  • Powdered ginger
  • Merkén pepper
  • Salt and pepper
  • Olive oil

Beer and sturgeon: a perfect pair

We’ve always paired beer and fish, with splendid results. And with so many types of beer, we can always give our cooking a new touch. Come try this easy recipe for sturgeon with beer, made by master chef Juan García, of the Restaurant Sarita Colonia.


  1. Finely cut the onion, potatoes, peppers and carrots.
  2. Preheat oven to 220ºC.
  3. Salt and pepper the fish. Add a little olive oil to the frying pan, and once hot, add the fish pieces. Seal each side for 1 minute at low heat.
  4. Lower heat and add vegetables. Season with rosemary, bay leaves, merkén, cumin and ginger. Brown for 3 minutes.
  5. Add beer and let alcohol evaporate.
  6. Place pan in oven for 10 minutes. Remove from oven and serve.

Use an oven-safe pan, in order to cook and serve in the same place.
