Principal ingredient
  • Oscietra Caviar – 50 gr
Blini ingredients
  • 200 gr flour
  • 3 egg yolks
  • 3 egg whites
  • 70 ml milk
  • 1 gr dry yeast
  • Salt
  • Pepper
Sour cream ingredients
  • 100 gr whipping cream
  • 15 ml lemon juice
  • 3 ml White vinegar
  • Salt
  • White pepper

The classic Russian caviar appetiser

An exquisite and highly elegant way to enjoy caviar is in the purest Russian style: traditional blinis (small pancakes) with their smooth texture and neutral flavour; sour cream, which combines perfectly with the last and most important ingredient: caviar. This preparation of the perfect trio is what Kenoz wants to offer today in a few simple steps.

Blini Preparation

  1. Heat the dry yeast with a little milk. Leave for 5 minutes.
  2. Strain flour into a bowl. Add the 3 yolks, the remaining milk and salt and pepper to taste. Mix well, obtaining a dense but liquid paste.
  3. Add yeast. Leave for 15 minutes at room temperature.
  4. Whisk egg whites into foam. Smoothly add to mixture.
  5. Heat a frying pan on a medium heat with a little oil and butter. Place a little batter in the pan and fry 1.5 min for each side until the blinis are ready.
  6. Cool before serving.

Sour Cream Preparation

  1. Mix all ingredients, obtaining a dense cream.
  2. Place one spoonful of Sour Cream on each cooled blini. Lightly drop one spoonful of caviar on top of each canapé. Serve immediately.
    Note: Remember to use a nacre spoon for serving caviar. If unavailable, use plastic or another neutral material, as metal oxidises caviar’s flavour.
